Main Ingredients
  • 24 pieces Medjool dates
  • 1 package (5.2 oz) Boursin cheese (garlic & herb flavor)
  • ½ cup shelled pistachios, roughly chopped
  • 2 tablespoons honey
  • to taste Fresh thyme for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Make a lengthwise slit in each date and carefully remove the pit.
  3. Fill each date with about 1 teaspoon of Boursin cheese and press slightly closed.
  4. Arrange the stuffed dates on a baking sheet.
  5. Sprinkle chopped pistachios on top and press them down gently to adhere.
Cooking
  1. Roast the dates in the oven for 6-8 minutes, until they are warm and the cheese is slightly melted.
  2. Drizzle with honey and garnish with fresh thyme if desired.
Serving
  1. Serve warm on a chic platter, or enjoy them straight from the baking sheet.

Notes

Store leftovers in an airtight container in the fridge for about 3 days. Reheat gently in the oven to retain the gooey texture.
