Ingredients

  • 2 cups corn (fresh, frozen, or canned)
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cream or milk
Optional Ingredients
  • 1/2 teaspoon garlic powder optional
  • 1/4 cup grated Parmesan cheese optional
  • Chopped parsley for garnish optional

Method
 

Preparation
  1. In a large skillet, melt the butter over medium heat.
  2. Add the corn, salt, and pepper, and cook for about 5 minutes, stirring occasionally.
  3. If using, stir in the garlic powder and cream (or milk) and let it simmer for another 5 minutes.
  4. If desired, add the Parmesan cheese and cook until melted and bubbly.
  5. Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for a month. Reheat gently on the stovetop or microwave. For variation, use olive oil instead of butter or make it vegan with coconut oil and plant-based milk.
