  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice Add a pinch of nutmeg or cinnamon for extra flavor.
  • 2 tablespoons sugar
  • Butter for cooking Just enough to coat the skillet.

Preparation
  1. Whisk together the milk, pumpkin puree, eggs, vanilla extract, pumpkin pie spice, and sugar in a bowl until well combined.
  2. Heat a skillet or griddle over medium heat and add a little butter to coat.
  3. Dip each slice of bread into the pumpkin mixture, making sure to soak it for a few seconds.
  4. Place the soaked bread on the skillet. Cook until golden brown on both sides, about 3-4 minutes per side.
  5. Serve warm with maple syrup and your favorite toppings.

Notes

Leftovers can be stored in the fridge for about 3-4 days or frozen for up to a month—layer slices with parchment paper before freezing. Reheat in a toaster or skillet for best results.
