Ingredients
  

Pasta and Bacon
  • 200 g Fusilli or Penne pasta
  • 150 g diced bacon Crispy fried
Vegetables
  • 100 g Romaine lettuce, roughly chopped
  • 200 g cherry tomatoes, halved
Dressing
  • 100 g mayonnaise
  • 2 tablespoons yogurt
  • 1 tablespoon Dijon mustard
  • to taste Salt and pepper

Method
 

Preparation
  1. Cook the pasta according to package instructions and drain.
  2. In a skillet, fry the bacon until crispy and let it drain on paper towels.
  3. In a large bowl, mix the mayonnaise, yogurt, Dijon mustard, salt, and pepper.
  4. Add the cooked pasta, crispy bacon, Romaine lettuce, and cherry tomatoes, and mix well.
  5. Serve chilled or at room temperature.

Notes

Best enjoyed fresh. Store leftovers in an airtight container for up to 3 days. Keep the lettuce separate until serving for optimal crunch.
