  • 4 cups chicken or vegetable broth Choose your preferred type of broth.
  • 2 cloves garlic, minced Adds flavor to the base.
  • 1 inch piece ginger, minced Enhances the soup's aroma.
  • 2 cups bok choy or spinach, chopped Choose one or both for a vibrant color.
  • 1 medium carrot, sliced Provides sweetness and crunch.
  • to taste soy sauce Adjust seasoning as desired.
  • drizzle sesame oil For added richness.
  • as needed green onions, for garnish Adds freshness on top.
Dumplings
  • to preference potstickers (dumplings) Use frozen dumplings for convenience.

Method
 

Preparation
  1. In a large pot, heat a little oil over medium heat and add the minced garlic and ginger, sautéing until fragrant.
  2. Pour in the broth and bring it to a boil.
  3. Add the sliced carrots and cook for a few minutes until tender.
  4. Gently add the dumplings and simmer according to package instructions until they are cooked through.
  5. Stir in the chopped greens and let them wilt.
  6. Season with soy sauce to taste and drizzle with sesame oil.
  7. Serve hot, garnished with sliced green onions.

Notes

Don’t skip toasting the garlic for maximum flavor. For a twist, try mushrooms, tofu, or different greens!
