Main ingredients
  • 16 pieces Potstickers (frozen or homemade)
  • 4 cups chicken or vegetable broth Use vegetable broth for a vegan option
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups greens (spinach or bok choy) Feel free to use any greens on hand
  • 1 tablespoon soy sauce Adjust for low sodium if desired
  • 1 tablespoon sesame oil
  • 2 tablespoons green onions, for garnish

Method
 

Cooking
  1. In a large pot, heat sesame oil over medium heat.
  2. Add garlic and ginger, and sauté until fragrant (about 1-2 minutes).
  3. Pour in the broth and bring to a simmer.
  4. Add potstickers and cook according to package instructions or until heated through.
  5. Stir in the greens and soy sauce, cooking until the greens are wilted.
  6. Serve hot, garnished with green onions.

Notes

To make the soup thicker, whisk in a teaspoon of cornstarch dissolved in a little cold water. A dash of red pepper flakes can add some spice. Store leftovers in the fridge for up to 3 days, or freeze for up to a month.
