  • 8 oz Silky rice noodles Use your preferred type of rice noodles.
  • 1 cup Crispy pan-fried potstickers Cook according to package instructions for best results.
  • 2 cups Tender vegetables (bell peppers, carrots, bok choy) Feel free to use seasonal vegetables.
  • 3 Tbsp Soy sauce Adjust according to taste.
  • 1 Tbsp Ginger Freshly grated for the best flavor.
  • 2 cloves Garlic Minced for aromatic flavor.
  • 1 Tbsp Sesame oil For sautéing the vegetables.
  • 2 Tbsp Green onions Chopped, for garnish.
  • 2 Tbsp Cilantro Optional, for garnish.
  • 1 Tbsp Black sesame seeds Optional, for garnish.

Method
 

Preparation
  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. In a pan, heat sesame oil over medium heat and sauté garlic and ginger until fragrant.
  3. Add the tender vegetables and cook until just tender.
  4. In a separate pan, pan-fry the potstickers until crispy.
  5. Combine the noodles, sautéed vegetables, and soy sauce in a large bowl.
  6. Top with crispy potstickers, garnish with green onions, cilantro, and black sesame seeds if desired.

Notes

Serve warm for best flavor. Store leftovers in the fridge for up to 3 days, keeping noodles and potstickers separate.
