Ingredients
  

Noodles and Vegetables
  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 4 cups coleslaw mix
Sauce and Seasonings
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup sliced green onions
  • 2 tablespoons sliced green onions for garnish
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha adjust to taste

Method
 

Preparation
  1. Cook the Lo Mein noodles in boiling water until slightly firm, then set aside.
  2. In a skillet, heat the peanut oil and brown the ground pork with 1/4 cup of sliced green onions.
  3. In a bowl, mix together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha to make the sauce.
Combine
  1. Add the cooked Lo Mein noodles, coleslaw mix, and the prepared sauce to the skillet.
  2. Toss everything quickly for about 2–3 minutes until evenly coated. Drizzle with the remaining sliced green onions before serving.

Notes

Don't skip toasting the garlic; it enhances the flavor. Store leftovers in the fridge for about 3-4 days and reheat as needed.
