Preparation
- Heat olive oil in a skillet over medium heat. Sear the pork loin on all sides until browned.
- Place the chopped onion and minced garlic in the crockpot.
- Add the seared pork loin on top of the onions.
- Pour the chicken broth and soy sauce over the pork.
- Sprinkle thyme, rosemary, salt, and pepper on top.
- Add any additional vegetables around the pork.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the pork is tender.
- Once cooked, remove the pork and let it rest before slicing. Serve with the cooked vegetables.
Notes
For extra flavor, marinate the pork in soy sauce, thyme, and rosemary for a few hours or overnight. Adjust cook time based on the size of the pork loin. Serve with buttery mashed potatoes or colorful roasted vegetables.
