  • 1 tablespoon olive oil For searing the pork.

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat. Sear the pork loin on all sides until browned.
  2. Place the chopped onion and minced garlic in the crockpot.
  3. Add the seared pork loin on top of the onions.
  4. Pour the chicken broth and soy sauce over the pork.
  5. Sprinkle thyme, rosemary, salt, and pepper on top.
  6. Add any additional vegetables around the pork.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the pork is tender.
  2. Once cooked, remove the pork and let it rest before slicing. Serve with the cooked vegetables.

Notes

For extra flavor, marinate the pork in soy sauce, thyme, and rosemary for a few hours or overnight. Adjust cook time based on the size of the pork loin. Serve with buttery mashed potatoes or colorful roasted vegetables.
