  • 2 cups cooked chicken, shredded You can use rotisserie chicken to save time.
  • 1 cup uncooked long-grain rice Any rice variety can be used, but cooking times may vary.
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder Adjust to taste.
  • 1/2 teaspoon onion powder Adjust to taste.
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese You can swap cheddar for mozzarella or pepper jack.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together chicken, rice, both soups, broth, milk, garlic powder, onion powder, and black pepper until well combined.
Baking
  1. Pour the mixture into a greased 9×13-inch baking dish.
  2. Cover the dish with foil and bake for 45 minutes.
  3. Remove the foil, sprinkle the cheese on top, and bake for another 15 minutes until bubbly and golden.
  4. Let it rest for 5 minutes before serving.

Notes

Serve with a crisp side salad or fresh veggies for a pop of color. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
