  • 1 box yellow cake mix
  • 1 can crushed pineapple (with juice)
  • 3 pieces eggs use cold for better texture
  • 1/2 cup vegetable oil
  • 1 cup shredded coconut optional; toast for stronger flavor
  • 1 cup chopped walnuts or pecans optional
Frosting Ingredients
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter softened
  • 1-2 tablespoons milk to reach desired consistency
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat the oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, combine the yellow cake mix, crushed pineapple (with juice), eggs, and vegetable oil. Mix until well combined.
  3. If you're feeling fancy, fold in the shredded coconut and chopped nuts.
  4. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. While the cake is baking, prepare the frosting by mixing together powdered sugar, softened butter, milk, and vanilla extract until smooth.
  3. Once the cake has cooled, spread the frosting over the top.

This cake can be stored in the fridge for about 3-4 days, or frozen for up to 3 months. Reheat slightly in the microwave for best taste.
