Dry Ingredients
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened coconut flakes Feel free to toast for deeper flavor.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 2 large eggs Can be replaced with flax eggs for a vegan version.
  • 1/2 cup crushed pineapple, drained Fresh or canned can be used.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the crushed pineapple and vanilla extract.
  5. In another bowl, whisk together the flour, coconut flakes, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool before serving.

Notes

Serve with a dusting of powdered sugar, whipped cream, or vanilla ice cream. Store in the fridge for up to 5 days or freeze for longer storage.
