  • 1 lb chicken breast, diced
  • 1 cup pineapple chunks Fresh or canned, both work well.
  • 2 cups cooked rice Ensure the rice is cooked beforehand.
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 piece bell pepper, diced Any color bell pepper can be used.
  • 2 pieces green onions, chopped For garnish.
  • Salt and pepper to taste

Method
 

Cooking
  1. In a large pan, heat olive oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the bell pepper and cook for another 3-4 minutes.
  4. Add the pineapple chunks, cooked rice, soy sauce, salt, and pepper.
  5. Stir until everything is combined and heated through.
  6. Garnish with chopped green onions and serve warm.

Notes

Store leftovers in the fridge for about 3-4 days or freeze individual portions for up to a month. Reheat using a microwave or stovetop.
