Main Ingredients
  • 2 slices slices of bread
  • 2 slices slices of cheese (cheddar, mozzarella, or your favorite)
  • 2 tablespoons tablespoons of pesto
  • Butter or olive oil for grilling Use as needed for grilling

Method
 

Preparation
  1. Spread pesto on one side of each slice of bread.
  2. Place cheese between the slices of bread, pesto side inwards.
Cooking
  1. Heat butter or olive oil in a skillet over medium heat.
  2. Grill the sandwich until golden brown and the cheese is melted, about 3-4 minutes on each side.
  3. Slice and serve warm.

Notes

Serve with a side of crunchy salad or sweet potato fries. Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in a skillet for best results.
