Preparation
- Spread pesto on one side of each slice of bread.
- Place cheese between the slices of bread, pesto side inwards.
Cooking
- Heat butter or olive oil in a skillet over medium heat.
- Grill the sandwich until golden brown and the cheese is melted, about 3-4 minutes on each side.
- Slice and serve warm.
Notes
Serve with a side of crunchy salad or sweet potato fries. Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in a skillet for best results.
