Preparation
- Preheat your oven to 425°F (220°C).
- Pat the chicken thighs dry with paper towels.
- In a bowl, combine olive oil, salt, black pepper, garlic powder, paprika, and dried thyme. Mix well.
- Rub the mixture all over the chicken thighs.
- Position the chicken thighs skin-side up on a baking sheet lined with parchment paper.
- Arrange lemon slices around the chicken if desired.
Cooking
- Bake for 35-45 minutes until the skin is golden brown and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before serving.

Tip: Use a meat thermometer to ensure the chicken reaches 165°F internal temperature for perfect doneness. These thighs keep well in the fridge for about 3–4 days and can be frozen for up to 3 months.
