  • 1 cup all-purpose flour Can substitute with gluten-free flour if necessary.
  • 1 tablespoon baking powder For raising the batter.
  • 1/2 teaspoon salt Balances the sweetness.
  • 1 cup milk Dairy or non-dairy options work.
  • 1/2 cup butter, melted Can substitute with coconut oil for a vegan version.
  • 1 teaspoon vanilla extract Adds flavor to the batter.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, raspberries, 1/2 cup of sugar, and cinnamon; set aside.
  3. In another bowl, mix the flour, remaining sugar, baking powder, and salt.
  4. Stir in the milk, melted butter, and vanilla extract until just combined.
Baking
  1. Pour the batter into a greased baking dish and spoon the fruit mixture over the top.
  2. Bake for 45-50 minutes or until the top is golden brown.
Serving
  1. Serve warm with a scoop of vanilla ice cream!

Notes

You can prep the fruit mixture ahead of time to simplify assembly. For a nutty flavor, consider adding almond flour.
