Ingredients

Main Ingredients
  • 1 pound lean ground beef Can substitute with ground turkey or chicken for a leaner option.
  • 1 package taco seasoning (1 oz)
  • 1 can diced tomatoes and green chiles (10 oz), undrained
  • 2 cups shredded cheddar cheese Can experiment with different cheeses, such as pepper jack for a bit of heat.
  • 1 bottle ranch dressing (8 oz) Alternative: zesty chipotle sauce.
  • 5 packages frozen phyllo tart shells (15 count each) You can use pastry dough or tortillas cut into rounds if phyllo shells are not available.

Method

Preparation
  1. Preheat your oven to 350°F.
  2. Cook the ground beef in a skillet until it’s beautifully brown and no longer pink. Drain off any fat.
  3. Toss in the taco seasoning and the diced tomatoes and chiles. Sauté for about 5 minutes until it’s all mixed and fragrant.
  4. In a bowl, combine cheddar cheese and ranch dressing. Fold in the cooked taco meat until everything mingles together nicely.
  5. Spoon this delicious mixture into the frozen phyllo shells.
  6. Bake for 8-10 minutes (or 10-13 minutes if your shells were frozen).

Notes

Ready to wow your guests? Serve these Party Bites garnished with some fresh cilantro or a drizzle of extra ranch. The bites keep well in the fridge for about 3-4 days and freeze for up to 3 months. Reheat in the oven for best results. Prepare the filling a day in advance for make-ahead ease.
