  • 2 pieces chicken breasts Seasoned and cooked
  • 8 oz pasta (penne or fettuccine) Cook according to package instructions
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced Add to the skillet for flavor
  • 2 cups spinach Cook until wilted
  • to taste Salt and pepper For seasoning
  • 1 tbsp Olive oil For cooking the chicken
  • for garnish Fresh parsley Chopped for serving

Method
 

Preparation
  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil.
  3. Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side until cooked through. Remove and set aside.
  4. In the same skillet, add minced garlic and sauté until fragrant.
  5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and combined.
  6. Add spinach and cook until wilted.
  7. Slice the chicken and return it to the skillet. Add cooked pasta and toss to combine.
  8. Garnish with fresh parsley and serve warm.

Notes

This dish is perfect for a cozy dinner and can be stored in the fridge for 3-4 days. Reheat in the microwave or stovetop. For a vegan version, substitute chicken with tofu or chickpeas.
