Preparation
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet over medium heat, heat olive oil.
- Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side until cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and combined.
- Add spinach and cook until wilted.
- Slice the chicken and return it to the skillet. Add cooked pasta and toss to combine.
- Garnish with fresh parsley and serve warm.
Notes
This dish is perfect for a cozy dinner and can be stored in the fridge for 3-4 days. Reheat in the microwave or stovetop. For a vegan version, substitute chicken with tofu or chickpeas.
