  • 4 pieces boneless, skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese Use freshly grated for a gourmet touch.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced To be toasted for extra flavor.
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil For frying.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a shallow bowl, mix together the bread crumbs, Parmesan cheese, mozzarella cheese, Italian seasoning, salt, and black pepper.
  3. In a separate bowl, whisk together the eggs and milk.
  4. Dredge each chicken breast in the flour, coating both sides.
  5. Dip the floured chicken into the egg mixture, ensuring it’s coated completely.
  6. Coat the chicken breasts in the breadcrumb mixture, pressing gently to adhere the crumbs.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Once hot, add the chicken breasts and cook for 3-4 minutes on each side until golden brown and crispy.
  3. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Notes

Leftovers can be stored in an airtight container in the fridge for about 3-4 days or frozen for up to 3 months. Reheat in the oven to maintain crispiness.
