  • 3 cups frozen hash browns
  • 1 cup shredded cheddar cheese Add extra for a crispier top

  • 1 medium onion, diced

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned; drain any excess fat.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  4. Grease a 9x13 inch baking dish and layer the hash browns, cooked sausage, bell pepper, onion, and cheese.
  5. Pour the egg mixture over the layered ingredients.
  6. Cover and refrigerate overnight or bake immediately.
Cooking
  1. Bake uncovered for 45-50 minutes until the casserole is set.
