Preparation
- Preheat your oven to 350°F (175°C).
 - In a skillet, cook the breakfast sausage over medium heat until browned; drain any excess fat.
 - In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
 - Grease a 9x13 inch baking dish and layer the hash browns, cooked sausage, bell pepper, onion, and cheese.
 - Pour the egg mixture over the layered ingredients.
 - Cover and refrigerate overnight or bake immediately.
 
Cooking
- Bake uncovered for 45-50 minutes until the casserole is set.
 
Notes
Store leftovers in the fridge for 3-4 days or freeze for up to a month. Reheat in the microwave or oven.
