Preparation
- Grease a 9×13 inch baking dish.
- Place torn croissant pieces in the dish.
- In a bowl, whisk together eggs, milk, salt, pepper, and vanilla (if using).
- Pour the egg mixture over the croissants.
- Sprinkle with cheese, sausage or bacon (if using), and herbs.
- Press down lightly to soak the croissants.
- Cover and refrigerate overnight.
Baking
- Preheat oven to 350°F (175°C).
- Bake, uncovered, for 30-35 minutes or until set and golden brown.
- Let cool slightly before serving.
Notes
This casserole keeps well in the fridge for 3-4 days. For freezing, wrap individual portions in plastic wrap and foil.
