Ingredients
  

For the Fries
  • 3 large sweet potatoes, peeled and cut into ½-inch thick fries
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon chili powder optional, for a little heat
  • ½ teaspoon sea salt or to taste
  • ¼ teaspoon black pepper, freshly ground
  • 1 tablespoon cornstarch or tapioca starch optional, for extra crispiness
Optional Dipping Sauce
  • Ketchup, aioli, sriracha mayo, or your favorite dipping sauce

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel the sweet potatoes and cut them into ½-inch thick fries.
  3. Soak the fries in cold water for at least 30 minutes (up to an hour). Drain and pat them completely dry with paper towels.
  4. In a big bowl, toss the fries with olive oil, smoked paprika, garlic powder, onion powder, dried oregano, chili powder (if desired), sea salt, black pepper, and cornstarch/tapioca starch (if using). Make sure they are well coated!
  5. Line a baking sheet with parchment paper. Spread the fries in a single layer, leaving space between them. Use two sheets if necessary.
Baking
  1. Bake the fries in the preheated oven for 20 minutes.
  2. After 20 minutes, flip the fries with a spatula.
  3. Continue baking for another 15-20 minutes, until they are tender inside and crispy outside.
  4. Optionally, broil for the last 1-2 minutes for extra crunch, keeping an eye on them to avoid burning.
  5. Once out of the oven, sprinkle with extra sea salt if needed.
Serving
  1. Serve the fries as a side dish or snack, paired with your favorite dipping sauce.

Notes

Store any leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven to restore crispiness. Soaking the fries helps remove starch for crunchier results. Avoid overcrowding the baking sheet.
