Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and garlic, cooking until softened, about 3-4 minutes.
  3. Stir in the carrots and celery, cooking for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Toss in the potatoes and green beans, reduce heat, and simmer until veggies are tender, about 15-20 minutes.
  6. Stir in the heavy cream, season with salt and pepper, and serve hot, garnished with fresh herbs.
