  • 1 teaspoon onion powder
  • 1 teaspoon paprika

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Season chicken thighs with garlic powder, onion powder, paprika, salt, and pepper.
  4. Add chicken thighs to the skillet and sear for about 5 minutes on each side until golden brown.
  5. Add your choice of vegetables around the chicken in the skillet.
Cooking
  1. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Serving

Notes

Leftovers can be stored in the fridge for about 3-4 days. For a fresh twist, try adding a marinade of lemon juice and herbs, or swap the chicken for tofu for a vegan version.
