Preparation
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat olive oil over medium heat.
- Season chicken thighs with garlic powder, onion powder, paprika, salt, and pepper.
- Add chicken thighs to the skillet and sear for about 5 minutes on each side until golden brown.
- Add your choice of vegetables around the chicken in the skillet.
Cooking
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Serving
- Garnish with fresh herbs if desired and serve.
Notes
Leftovers can be stored in the fridge for about 3-4 days. For a fresh twist, try adding a marinade of lemon juice and herbs, or swap the chicken for tofu for a vegan version.
