  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika

Cooking Instructions
  1. In a large skillet over medium heat, sear the seasoned chicken for about 5 minutes on each side until browned.
  2. In a small bowl, whisk together BBQ sauce and honey, then pour it over the chicken.
  3. Add the rice and chicken broth; stir everything to combine.
  4. Bring to a simmer, cover, and cook on low for about 20 minutes until rice is tender.
  5. During the last 5 minutes of cooking, add the mixed vegetables on top to steam.
  6. Let it sit for 5 minutes before fluffing the rice with a fork and serving.

Notes

Let the chicken rest before slicing to keep the juices in. For an extra flavor kick, try marinating the chicken in BBQ sauce before cooking. Leftovers can be mixed into a salad for a refreshing lunch.
