Ingredients
  

Dry Ingredients
  • 1 cup rolled oats Use gluten-free oats for a gluten-free version.
  • 1/2 cup protein powder Any type of protein powder works.
  • 1/2 teaspoon baking soda
Wet Ingredients
  • 1/2 cup peanut butter or almond butter Feel free to use other nut butters.
  • 1/4 cup honey or maple syrup For a vegan version, use maple syrup.
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chocolate chips or dried fruit Optional for added flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, protein powder, and baking soda.
  3. In another bowl, combine the peanut butter and honey (or maple syrup) and mix until smooth.
  4. Add the wet ingredients to the dry ingredients and mix well. Stir in the vanilla extract and chocolate chips or dried fruit, if using.
  5. Scoop tablespoon-sized portions of the dough onto a lined baking sheet and flatten slightly.
Baking
  1. Bake for about 10-12 minutes or until the edges are lightly golden.
  2. Let cool before enjoying.

Notes

Don't overbake; it's all about achieving a chewy texture. You can experiment with different nut butters and spices like cinnamon or nutmeg for variety. Store in an airtight container for about a week in the fridge or freeze for up to three months.
