  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, combine grated carrots, applesauce, eggs, and vanilla extract.
  3. In another bowl, mix almond flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. Fold in the walnuts and any optional ingredients (raisins or coconut flakes).
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
