Preparation
- Preheat your oven to 350°F and line a cookie sheet with parchment paper.
- In a bowl, mix the unsweetened applesauce, melted coconut oil, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together the gluten free all-purpose flour blend, baking soda, baking powder, and salt.
- Gradually blend the dry ingredients into the wet mixture until the batter is smooth.
- Stir in the dairy free chocolate chips, making sure they are evenly distributed.
Baking
- Scoop rounded tablespoonfuls of batter onto the cookie sheet, leaving space between each one.
- Use your finger or the back of a spoon to gently flatten the tops of the cookies.
- Bake for 12-15 minutes or until the edges start to turn golden.
- Remove the cookies from the oven and let them cool on the tray for a few minutes.
- Transfer to a cooling rack to cool completely and enjoy your healthy treat!
Notes
Chill the dough for thicker cookies. Experiment with spices like cinnamon or nutmeg for added flavor. Substitute applesauce with mashed bananas for a different twist. Add chopped nuts for crunch.
