  • 2 cups gluten-free all-purpose flour Make sure it contains xanthan gum or add 1 teaspoon separately.
  • 1 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 tablespoon sugar Or honey for a healthier option.

  • 1.5 cups warm water
  • 1 tablespoon olive oil

Preparation
  1. In a large mixing bowl, combine the flour, salt, instant yeast, and sugar.
  2. Slowly add the warm water and olive oil. Stir until just blended; it should look a bit shaggy and sloppy.
  3. Cover the bowl with a kitchen towel and let it sit at room temperature for about 12–18 hours.
Baking
  1. The next day, preheat your oven to 450°F (230°C) and place a Dutch oven inside to heat up.
  2. Once preheated, carefully remove the pot. Pour in the dough (grease or line it) and cover it with a lid.
  3. Bake for 30 minutes with the lid on, then remove the lid and bake for another 15 minutes until golden brown.
  4. Let it cool before slicing—patience is a virtue!

Notes

Use a kitchen scale for precise measurements. Experiment with flavors by adding herbs or cheese. The longer the dough rests, the better the flavor and texture.
