Preparation
- Preheat your oven to 400°F (200°C) if you’re using puff pastry.
- Roll out the puff pastry and cut into small squares.
- Place a piece of Brie cheese in the center of each square.
- Top each piece of cheese with a spoonful of cranberry sauce.
- Fold the pastry over the cheese and sauce to create a bite-sized packet. Seal well.
- Arrange the bites on a baking sheet and brush with egg wash if desired.
- Bake for 10 minutes until golden and puffed.
- Take out of the oven and garnish with fresh thyme or rosemary.
- Drizzle with honey if you want an extra layer of sweetness.

- Serve warm straight from the oven on a beautiful platter.
- Provide toothpicks for easy grabbing.

- Store leftovers in an airtight container in the fridge for up to two days.
- Reheat before serving for best taste.
Notes
Feel free to customize the bites with different sauces or toppings. Phylo dough can be used instead of puff pastry but brush each layer with melted butter for best results.
