  • 1 cup sugar
  • 1/2 cup butter, softened Make sure it is softened for easy creaming.
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts (optional) Replace with cinnamon for nut-free.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mash the bananas until they’re smooth.
  3. In a separate bowl, cream together the butter and sugar until fluffy.
  4. Beat in the egg and vanilla until everything’s smooth.
  5. Stir in the mashed bananas, mixing it well.
  6. In another bowl, mix the flour, baking soda, and salt.
  7. Gradually stir the dry ingredients into the banana mixture until just combined — don’t over-mix!
  8. Fold in the chocolate chips and walnuts if you’re feeling nutty.
  9. Drop spoonfuls of the dough onto a lined baking sheet.
  10. Bake for about 10-12 minutes or until golden and aromatic.
  11. Let them cool before serving.

Notes

Store cookies in an airtight container. For chewier cookies, chill dough for an hour before baking.
