Ingredients
  

For the filling
  • 3 each Jalapenos, diced Leave seeds in for extra spiciness if desired.
  • 8 oz Cream cheese, softened Can use vegan cream cheese as a substitute.
  • 1 cup Shredded cheddar cheese Experiment with different cheeses like pepper jack.
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
For assembling and frying
  • 10 each Egg roll wrappers Can substitute with spring roll wrappers.
  • 1 cup Oil for frying Use enough oil to submerge the egg rolls.

Method
 

Preparation
  1. In a bowl, mix the diced jalapenos, cream cheese, shredded cheddar cheese, garlic powder, and onion powder until well combined.
  2. Take an egg roll wrapper and place a spoonful of the filling in the center.
  3. Fold the wrapper over the filling, then roll it tightly; seal the edges with a little water.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
  3. Remove and drain on paper towels. Serve warm.

Notes

Pairs well with a zesty ranch or chipotle dipping sauce. Store leftovers in an airtight container in the fridge for up to 3 days or freeze before frying.
