  • 4.5 cups chopped cooked chicken
  • 4 oz cream cheese (room temperature) Make sure it's at room temperature for easier mixing.
  • 1 cup cottage cheese
  • 0.5 cup sour cream
  • 1 can Unsalted Cream of Chicken Soup (10.5 oz)
  • 0.25 tsp garlic powder
  • 0.25 tsp dried onion powder
  • 1 sleeve Ritz crackers (crushed)
  • 5 Tbsp butter (melted)

Method
 

Preparation
  1. Preheat your oven to 350ºF and lightly spray a 9x9 inch baking dish with cooking spray; set it aside.
  2. In a large bowl, combine chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup.
  3. Spread the mixture evenly into the prepared pan.
  4. In a separate bowl, mix together crushed crackers and melted butter.
  5. Sprinkle the buttery cracker mixture over the chicken mixture.
Baking
  1. Bake uncovered for 30 to 40 minutes until bubbly and golden.

Notes

Let the casserole cool for a few minutes before serving to avoid spooning out soup instead of slices. Feel free to add in veggies like spinach or broccoli for added nutrition and color. For a spicy kick, consider adding hot sauce or crushed red pepper flakes.
