  • 1 tablespoon olive oil For sautéing the onion.
  • 1 small onion, chopped Sauté until translucent.

Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Toss in the minced garlic, cumin, and chili powder, sautéing for another 1-2 minutes until fragrant.
  3. Pour in the chicken or vegetable broth and bring it to a simmer.
  4. Season with salt and pepper to taste.
  5. Let it simmer for about 15 minutes.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

Store leftovers in the fridge for up to 3 days or freeze for 2-3 months. Reheat on the stove until warmed through.
