  • 4 tablespoons unsalted butter Melted
  • 2 tablespoons olive or avocado oil
  • 1 teaspoon fresh rosemary Chopped
  • 1 teaspoon fresh thyme Chopped
  • 3 cloves garlic (finely minced)
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup raw pecans For topping
  • 3 tablespoons maple syrup Optional for drizzling

Method
 

Preparation
  1. Preheat the oven to 400°F (204°C).
  2. Wash and dry your sweet potatoes thoroughly, then slice them into ½-inch thick rounds.
  3. In a small saucepan, melt the butter and mix it with the olive oil, rosemary, thyme, garlic, sea salt, and black pepper.
  4. Coat the potato slices evenly with your spiced butter mixture.
  5. Arrange the slices on a 12x17-inch baking sheet, ensuring they are not overcrowded.
Cooking
  1. Roast for 30-35 minutes, flipping halfway through, until they are golden and fork-tender.
  2. Optional: Drizzle maple syrup over the sweet potatoes during the last 5-7 minutes of roasting.

Notes

For best results, cut uniform slices to ensure even cooking. Flipping is key for even roasting. Experiment with herbs for varied flavors.
