Ingredients

For the cookie bars
  • 1 cup unsalted butter, melted and slightly cooled Don’t skimp on the butter for the best texture.
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • cups all-purpose flour Can swap half for whole wheat flour for a healthier option.
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 2 cups semi-sweet chocolate chips Feel free to mix with milk chocolate or dark chocolate.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch pan or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, whisking until well combined.
  3. In another bowl, mix the flour, salt, and baking soda. Gradually stir the dry ingredients into the wet mixture until no streaks of flour remain—be careful not to overmix!
  4. Fold in the chocolate chips.
  5. Spread the dough evenly into the prepared pan and smooth the surface.
Baking
  1. Bake for 28–32 minutes until the top is lightly golden and a toothpick inserted in the center comes out clean or with moist crumbs.
  2. Let the bars cool in the pan for at least 20 minutes before cutting into squares.

Notes

Serve warm, topped with a scoop of vanilla ice cream for the ultimate indulgence. For extra flavor, sprinkle with flaky sea salt.
