Ingredients
  

Filling
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil Use extra for added crunch if desired.
  • Black pepper (to taste)
For Serving
  • Tzatziki sauce for dipping
  • Fresh salad sprinkled with olives and lemon
  • Roasted veggies Colorful and aromatic sides.

Method
 

Preparation
  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix well.
  2. Lay one tortilla flat and place one-fourth of the filling mixture on half of the tortilla. Fold it over to cover that scrumptious filling!
Cooking
  1. Heat a non-stick skillet over medium heat and add the olive oil.
  2. Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown.
  3. Flip carefully and cook for another 3-4 minutes until both sides are crispy.
  4. Remove from heat, slice into wedges, and serve warm.

Notes

These quesadillas can be stored in the fridge for about 3-4 days or frozen in an airtight container for up to 3 months. Reheat in a skillet for best results.
