  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad mixture and toss it all together to combine.
  4. Top with feta cheese and enjoy immediately, or refrigerate for later.

Notes

This salad will stay fresh in the fridge for 3-5 days. To maintain the best flavor, eat it cold. Freezing is not recommended, as the texture may change.
