  • 2 pieces chicken breasts, diced
  • 2 pieces zucchinis, sliced
  • 1 piece red bell pepper, chopped
  • 1 piece yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • 1 cup cherry tomatoes, halved
  • 0.5 cup feta cheese, crumbled
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the diced chicken, zucchini, bell pepper, onion, garlic, oregano, basil, salt, and pepper.
  3. Drizzle the olive oil over the mixture and toss to combine.
  4. Transfer the mixture to a baking dish and top with cherry tomatoes and feta cheese.
Cooking
  1. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
