  • 1.5 lbs Chicken breasts, boneless & skinless, cut into bite-sized pieces
  • 3 tbsp Extra virgin olive oil, divided for cooking
  • Salt & black pepper, to taste
  • 2 medium Zucchini, sliced into half-moons
  • 2 Red bell peppers, diced into chunks
  • 1 large Red onion, sliced into strips
  • 2 cups Cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 4 cloves Garlic, minced
  • 1/4 cup Sun-dried tomatoes, chopped
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 large Lemon, juice only
  • 0.5 cup Feta cheese, crumbled
  • 2 tbsp Fresh parsley, optional garnish

Method
 

Preparation
  1. Prep ingredients and chop everything before cooking.
Cooking
  1. Sear chicken in a skillet over medium heat with 2 tablespoons of olive oil until golden and cooked through (about 6-7 minutes).
  2. Sauté onions, garlic, and vegetables in the same pan, starting with zucchini and red bell peppers until tender—about 5 minutes.
  3. Combine chicken and vegetables, season with salt, pepper, oregano, basil, and thyme, then toss everything together until well mixed.
  4. Add lemon juice, olives, and feta. Gently mix, and serve warm.

Notes

Consider marinating chicken for an hour with olive oil, lemon juice, and spices for extra flavor. You can use frozen veggies if you’re short on time.
