  • 4 pieces cod fillets Fresh cod fillets
  • 2 tablespoons olive oil Extra virgin for best flavor
  • 2 cloves garlic, minced Freshly minced
  • 1 whole lemon, zested and juiced Use the juice and zest
  • 1 teaspoon dried oregano Can substitute with fresh oregano
  • Salt and pepper to taste For seasoning
  • Fresh parsley, chopped (for garnish) Optional for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, garlic, lemon zest, lemon juice, oregano, salt, and pepper.
Cooking
  1. Place the cod fillets in a baking dish and pour the lemon-garlic mixture over the top.
  2. Bake in the preheated oven for 15-20 minutes or until the cod is cooked through and flakes easily with a fork.
Serving
  1. Garnish with fresh parsley before serving.

Notes

You can serve the cod over a bed of fluffy quinoa or alongside a colorful Mediterranean salad. For texture, broil the cod for the last 2-3 minutes of baking for crispy edges.
