Ingredients
  

For the Meatloaf
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup diced onion
  • 1 egg
  • 1/4 cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp pepper
For the Mashed Potatoes
  • 2 cups mashed potatoes Prepared according to recipe instructions
For the Topping
  • 1 cup shredded cheese (cheddar or your choice)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, onion, egg, milk, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf and place it in a greased baking dish.
Cooking
  1. Bake for 45-60 minutes or until the internal temperature reaches 160°F (70°C).
  2. While the meatloaf bakes, prepare the mashed potatoes according to your recipe or package instructions.
  3. Once the meatloaf is done, remove it from the oven and top with shredded cheese.
  4. Return to the oven for another 5-10 minutes until the cheese is melted and bubbly.
Serving
  1. Serve slices of meatloaf alongside the mashed potatoes.

Notes

Let the meatloaf rest for a few minutes before slicing for juiciness. Serve with gravy and steamed veggies for a complete meal.
