Ingredients
  

Dressing
  • 1/2 cup olive oil Extra virgin olive oil adds a luxurious touch.
  • 3 Tbsp white vinegar Rice vinegar or lemon juice can be used as substitutes.
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/2 tsp sea salt
Salad Ingredients
  • 14 to 16 oz romaine leaf lettuce (chopped)
  • 1 cup kalamata olives (sliced) Can substitute with artichoke hearts or diced pickles.
  • 1 cup pepperoncinis
  • 2 cups cherry tomatoes (halved)
  • 2 cups salami (cut into strips) Can substitute with turkey or make it meatless.
  • 1/2 cup red onion (thinly sliced)
  • 6 oz grated Parmesan cheese Adjust to taste, between 1/2 to 1 cup.

Method
 

Preparation
  1. Combine olive oil, vinegar, garlic powder, onion powder, dried parsley, dried oregano, black pepper, and salt in a small bowl. Stir well and set aside.
  2. Dice the romaine lettuce, halve the tomatoes, and thinly slice the onions.
Assembly
  1. Toss all salad ingredients in a large bowl.
  2. Drizzle the dressing over the salad and toss lightly. Store any extra dressing in a mason jar for up to two weeks.
  3. Adjust for taste by adding more Parmesan cheese or dressing as preferred.
Serving
  1. Serve it in a big, vibrant bowl where the colors can shine. Pair it with grilled chicken or pasta.

Notes

Allow the salad to sit for a few minutes before serving to let the flavors meld beautifully. Storing the salad and dressing separately keeps everything fresh for several days.
