  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil For cooking
  • 1 cup heavy cream For the sauce
  • 1 cup chicken broth

  • 1/2 cup sun-dried tomatoes, chopped

Method
 

Cooking Steps
  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken and cook until golden brown, about 6-7 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and cook until fragrant.
  4. Add chicken broth, heavy cream, Italian seasoning, and sun-dried tomatoes. Bring to a simmer.
  5. Stir in Parmesan cheese until melted.
  6. Return the chicken to the skillet and let it simmer in the sauce for about 5-10 minutes, until cooked through.
  7. Garnish with fresh basil and serve with pasta or rice.

Notes

Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. Reheat gently to prevent the sauce from separating.
