Cheese and Olives
  • 200 g feta cheese, cubed
  • 200 g mozzarella cheese, cubed
  • 200 g mixed olives (e.g., Kalamata, green)
Marinade
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon red pepper flakes (optional) For a kick of heat
  • 120 ml olive oil
  • 60 ml balsamic vinegar
  • to taste freshly cracked black pepper

Method
 

Preparation
  1. In a large bowl, combine cubed feta, cubed mozzarella, and mixed olives.
  2. In a separate bowl, whisk together minced garlic, oregano, rosemary, red pepper flakes, olive oil, balsamic vinegar, and black pepper.
  3. Pour the marinade over the cheese and olives, tossing gently to coat.
  4. Transfer the mixture into a glass jar or container, ensuring garlic and herbs are evenly distributed.
  5. Seal and refrigerate for at least 2 hours, preferably overnight, for best flavor.
Serving
  1. Serve chilled or at room temperature with bread or crackers.
