  • 2 cups cooked chicken breast, shredded or rotisserie chicken
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic, minced
  • 1/4 cup cream cheese, softened
  • 1 tablespoon olive oil
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste
  • 1 handful baby spinach, optional For added nutrition and crunch

Method
 

Preparation
  1. Preheat a skillet or grill pan over medium heat and add olive oil.
  2. Warm tortillas in the microwave for 10-15 seconds, covered with a damp paper towel.
  3. In a mixing bowl, combine chicken, mozzarella, cheddar, cream cheese, garlic, parsley, salt, and pepper. Mix well.
  4. Divide the mixture among the tortillas and roll them tightly.
Cooking
  1. Place wraps seam-side down in the skillet. Cook for 2-3 minutes per side until golden brown with cheese oozing out.
  2. Remove, slice in half, and serve hot, garnished with extra parsley if desired.

Notes

Serve these wraps hot, with a sprinkle of fresh parsley on top for a pop of color. Pair with a light salad or dip into your favorite sauce. For storing, keep in an airtight container for up to 3 days in the fridge or freeze for up to 3 months. Reheat in a skillet to regain crispiness.
