  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 1 tablespoon olive oil (for searing)
For the topping
  • 0.5 cup shredded mozzarella cheese (optional, for extra cheesiness)
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup ranch dressing
  • 0.25 cup mayonnaise
  • 2 cloves garlic (minced)
  • 0.5 teaspoon Italian seasoning
  • 0.25 teaspoon red pepper flakes (optional, for a little heat)
  • 0.5 cup Panko breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter (melted)
  • 1 tablespoon chopped fresh parsley (for garnish)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, black pepper, garlic powder, and paprika.
  3. In a skillet over medium heat, add olive oil and sear the chicken for about 3-4 minutes on each side until golden brown.
Topping
  1. In a mixing bowl, combine ranch dressing, mayonnaise, minced garlic, Italian seasoning, mozzarella cheese (if desired), and Parmesan cheese.
  2. Place the seared chicken in a baking dish and spoon the topping evenly over each breast.
  3. Sprinkle with Panko breadcrumbs and additional Parmesan.
  4. Drizzle melted butter over the top.
Cooking
  1. Bake for 20 minutes or until the internal temperature reaches 165°F (74°C).
  2. Let rest for a few minutes before garnishing with fresh parsley and serving.

Notes

Consider serving with a crisp green salad or mashed potatoes. Store in an airtight container in the fridge for up to 3 days or freeze for about 2 months.
