Ingredients
  

Chicken and Coating
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the mayonnaise, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, combine the grated Parmesan cheese and breadcrumbs.
  4. Coat each chicken breast with the mayonnaise mixture, then press it into the Parmesan-breadcrumb mixture to coat evenly.
  5. Place the coated chicken breasts on a baking sheet lined with parchment paper.
Cooking
  1. Bake for about 25-30 minutes, or until the chicken is cooked through and the crust is golden brown.
  2. Garnish with fresh parsley if desired, and serve warm.

Notes

Don’t rush the baking – the chicken gets that mouth-watering crunch the longer it bakes! Store leftovers in the fridge for up to 3 days or freeze for about 2 months.
