Ingredients
  

Chicken and Coating
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup bread crumbs Can substitute with panko for extra crunch
  • 1 cup grated Parmesan cheese Divided for use in coating and topping
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour Season with salt and pepper for extra flavor
  • 2 large eggs Beaten for the egg wash
  • 1/4 cup milk Can use plant-based milk for a vegan version
Seasonings
  • 2 cloves garlic, minced Toasted for added flavor
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Cooking
  • 2 tablespoons olive oil For frying the chicken

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In one dish, mix breadcrumbs, half the Parmesan, and seasonings.
  3. In another bowl, beat together the eggs and milk.
  4. Put flour in a third dish.
Cooking
  1. Dredge the chicken in flour, dip it in the egg mixture, then coat it with the breadcrumb mixture.
  2. Cook the chicken in olive oil for 3-4 minutes per side until golden brown.
  3. Transfer the chicken to a baking dish.
  4. Mix remaining Parmesan with mozzarella and garlic, then spread on top of the chicken.
  5. Bake for 20-25 minutes until the chicken is fully cooked through.

Notes

For best results, reheat leftovers in the oven to maintain crispiness. Can be served with steamed vegetables or a fresh garden salad for an added pop of color.
