Preparation
- Preheat your oven to 375°F (190°C).
- In one dish, mix breadcrumbs, half the Parmesan, and the seasonings.
- In a second dish, beat the eggs and milk until combined.
- Place the flour in a third dish.
- Dredge the chicken in flour, then dip it in the egg mixture, and finally coat it in the breadcrumb mixture.
Cooking
- In a skillet, cook the chicken in olive oil for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish.
- In a bowl, mix remaining Parmesan with mozzarella and garlic, then top the chicken.
- Bake for 20-25 minutes until cooked through and cheese is bubbly.
Notes
If you're running low on Parmesan, just use all mozzarella — it’s still delicious! For storage, the chicken keeps in the fridge for 3-4 days and freezes well for up to 3 months.
