Main Ingredients
  • 4 pieces boneless skinless chicken breasts
  • 1 cup bread crumbs Use fresh for extra crispiness.
  • 1 cup grated Parmesan cheese Can substitute with mozzarella if needed.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced Fresh garlic recommended.
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil For cooking the chicken.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In one dish, mix breadcrumbs, half the Parmesan, and the seasonings.
  3. In a second dish, beat the eggs and milk until combined.
  4. Place the flour in a third dish.
  5. Dredge the chicken in flour, then dip it in the egg mixture, and finally coat it in the breadcrumb mixture.
Cooking
  1. In a skillet, cook the chicken in olive oil for 3-4 minutes on each side until golden brown.
  2. Transfer the chicken to a baking dish.
  3. In a bowl, mix remaining Parmesan with mozzarella and garlic, then top the chicken.
  4. Bake for 20-25 minutes until cooked through and cheese is bubbly.

Notes

If you're running low on Parmesan, just use all mozzarella — it’s still delicious! For storage, the chicken keeps in the fridge for 3-4 days and freezes well for up to 3 months.
